Peace through Chocolates? Contd...

Markoff established Vosges in 1998 as a gourmet chocolate company.

The chocolates were quite different from others as Markoff treated them not as mere chocolates but enhanced them with several ingredients such as spices, herbs, roots, flowers, fruits, liqueurs, and nuts that she came across in the course of her travels across the world.

The result was chocolates with a difference, which enabled the customers to taste and experience flavors from different parts of the world.

"It got to be about much more than just doing interesting flavors with chocolate. It's about telling a story of a different culture, artist, movement, or religion through the medium of chocolate,"6 said Markoff.

Markoff, a native of Indiana7, went to Paris to study culinary arts after completing her graduation. After acquiring a degree in culinary arts, Markoff traveled to several countries to learn about their local cuisines. She also studied in Hong Kong and was highly influenced by the spice markets in Asia.

She transformed her inspiration into a successful business, using her experiences to develop exotic truffles using a variety of spices ranging from Japanese wasabi8, Italian taleggio cheese, Indian curry, balsamic vinegar, to the Mexican ancho chili. The unusual flavors of her chocolates helped her make a mark in the chocolate industry...
